Black Cocoa Energy Bites

Ingredients
  • 1 1/4 cup cashews (raw unsalted (OR combination of half almonds and half cashews))
  • 1 cup medjool dates (packed pitted)
  • 1/2 cup unsweetened shredded coconut
  • 1 tsp pure vanilla extract
  • 3 tbsp black cacao powder (alternatively use regular cocoa powder)
  • 2 tbsp almond butter (or cashew butter)
  • 1 tbsp coconut oil (virgin)
  • 1/4 tsp ground cinnamon
  • 1 pinch salt
  • 1/4 cup mini chocolate chips (vegan)
  • 3 tbsp cocoa nibs
  • 2 tbsp white chocolate (melted (optional))
Instructions
  1. Place cashews and dates in a food processor and blend until combined. Then add remainder of ingredients minus chocolate chips, chocolate nibs and white chocolate, and pulse until mixture starts to clump together.
  2. Transfer to a bowl and scrape down the sides with a spatula. Add chocolate chips and chocolate nibs and mix with spatula or by hand until the dough is formed. Use your hands to form small 1 inch round balls, rolling in your palm. Be sure to press the dough firmly when making the balls to ensure it doesn't crumble.
  3. Melt the white chocolate in a microwave safe bowl in 10-15 seconds spurts, mixing in between until fully melted, careful not to burn the chocolate. Store in an airtight container in the refrigerator for up to a 2 weeks. ENJOY!
