Description

Luscious high protein chocolate mousse topped with caramelized bananas and toasted almond slices, this breakfast might taste like dessert but it's high in protein and fibre.

Ingredients
    Chocolate Peanut Butter Mousse
  • 1 cup soft tofu
  • 1/4 cup melted semi-sweet dark chocolate (vegan)
  • 1 tbsp cocoa powder
  • 2 tbsp natural smooth peanut butter
  • 1 tsp pure vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of salt
  • Toppings
  • 1 small banana
  • 1 tsp brown sugar
  • 1 tsp coconut oil
  • 2 tbsp chopped roasted almonds
  • Optional- drizzle 2 tsp melted chocolate mixed with 1/2 tsp olive oil.
  • 3 slices of sourdough toast
Instructions
  1. To make the chocolate peanut butter mousse add all mousse ingredients to a blender and blend until completely smooth. (To melt chocolate use a double boiler method or melt slowly in the microwave).

  2. Heat a pan on medium heat and add coconut oil. Once heated, add banana slices and sugar on each slice. Flip each slice over after 1-2 mins and allow to caramelize.
  3. To assemble toast: Spread a thick even layer of mousse on toasted slice of sourdough, top with caramelized bananas, toasted almonds and optional melted chocolate (mixed with olive oil). Enjoy!
