Cucumber Lime Refresher

My NEW favourite drink of the summer is my Cucumber Lime Juice, it's so simple and refreshing, reminds me of a perfect summer day.

Ingredients
  • 1/2 cup sugar
  • 1/2 cup lime juice (approximately 5 limes)
  • 4 cup chopped and seeded cucumber (approximately 3 medium cucumbers)
  • 3.5-5 cup water (as per desired taste)
Instructions
  1. In a heatproof measuring glass combine the sugar and enough water to simmer 1 cup of liquid. Allow the sugar to dissolve into the hot water, stirring occasionally.
  2. This water needs to cool before using it.
  3. Juice the limes. Peel, seed and chop cucumbers. Place the cucumbers in the blender. Add the lime juice, the dissolved sugar 1/2 portion. Process until smooth.
  4. Strain the mixture into a pitcher. Add remaining water to pitcher. Taste and adjust with sugar water as per taste. Serve cold. Enjoy!
