Description

This bright and tangy Greek-Style Lemon Tofu Feta is a flavour-packed plant-based alternative that’s perfect for salads, wraps, mezze boards, or snacking straight from the fridge.

Ingredients
    Tofu
  • 200 g extra firm tofu (cut into small cubes)
  • Marinade
  • Juice of ½ lemon
  • Zest from 1 lemon
  • 1 tbsp fresh mint finely chopped
  • 1 tbsp fresh dill- optional
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 1 tsp miso paste - mixed with 1 tbsp water into a paste
  • 1 tbsp nutritional yeast
  • 3 tbsp extra virgin olive oil
  • 1 tsp apple cider vinegar
  • 1 tbsp liquid aminos
  • 1/4 tsp asafoetida (hing)
  • 1 tsp high quality dijon mustard
  • 1/4 tsp chili flakes
  • 1 tbsp pickled calabrian peppers- chopped (optional)
  • 1 tbsp capers
  • Salt to taste
Instructions
    Prepare the tofu:
  1. Pat the tofu dry with a clean towel to remove excess moisture. Cut it into small, bite-sized cubes and set aside.
  2. Make the marinade:
  3. In a medium bowl or jar, combine all marinade ingredients: lemon juice and zest, chopped mint, dill if using, oregano, thyme, miso paste mixture, nutritional yeast, olive oil, apple cider vinegar, liquid aminos, asafoetida, Dijon mustard, chili flakes, Calabrian peppers (if using), capers, and salt. Mix well to form a cohesive dressing.

  4. Marinate the tofu:
  5. Place the tofu cubes in a shallow container or jar. Pour the marinade over the tofu, gently tossing to ensure all cubes are well coated.
  6. Let it soak:
  7. Cover and refrigerate for at least 2 hours—overnight is ideal for the best flavour. Stir once or twice during marinating if you can.
  8. Serve and enjoy:
  9. Use as a topping for salads (especially Greek salad), grain bowls, toast, or part of a vegan charcuterie board. Store in the fridge for up to 5 days.
