This bright and tangy Greek-Style Lemon Tofu Feta is a flavour-packed plant-based alternative that’s perfect for salads, wraps, mezze boards, or snacking straight from the fridge.
Ingredients
Tofu
200g extra firm tofu (cut into small cubes)
Marinade
Juice of ½ lemon
Zest from 1 lemon
1tbsp fresh mint finely chopped
1tbsp fresh dill- optional
2tsp dried oregano
2tsp dried thyme
1tsp miso paste - mixed with 1 tbsp water into a paste
Pat the tofu dry with a clean towel to remove excess moisture. Cut it into small, bite-sized cubes and set aside.
Make the marinade:
In a medium bowl or jar, combine all marinade ingredients: lemon juice and zest, chopped mint, dill if using, oregano, thyme, miso paste mixture, nutritional yeast, olive oil, apple cider vinegar, liquid aminos, asafoetida, Dijon mustard, chili flakes, Calabrian peppers (if using), capers, and salt. Mix well to form a cohesive dressing.
Marinate the tofu:
Place the tofu cubes in a shallow container or jar. Pour the marinade over the tofu, gently tossing to ensure all cubes are well coated.
Let it soak:
Cover and refrigerate for at least 2 hours—overnight is ideal for the best flavour. Stir once or twice during marinating if you can.
Serve and enjoy:
