This High-Protein Cookie Butter Granola is a crunchy, nutty, and lightly spiced blend of oats, nuts, and seeds, all coated in a rich mix of cookie butter and cashew butter for a deliciously satisfying and nourishing snack.
Ingredients
1.5cups gluten free large flake oats (aka rolled oats)
1.5cup gluten free quick oats (or replace with large flake oats)
2tbsp ground flax seeds
1/4cup hemp seeds
3/4cup raw whole almonds
3/4cup raw pecans chopped
1/4cup raw walnuts chopped
1tbsp chia seeds
1tsp ground nutmeg
1/2tsp ground ginger
1/2cup shredded unsweetened coconut flakes
1/2tbsp ground cinnamon
Pinch of ground cloves
1/2tsp salt
1/4cup extra virgin olive oil
1/3cup maple syrup
1tbsp pure vanilla extract
1/4cup cookie butter of choice ((I used Biscoff butter, for GF options use a GF cookie butter))
1/4cup cashew butter
Instructions
Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper. This helps with easy cleanup and prevents sticking.
In a large mixing bowl, combine the oats, flax seeds, hemp seeds, almonds, pecans, walnuts, chia seeds, coconut flakes, cinnamon, nutmeg, ginger, cloves, and salt. Stir everything together so the spices evenly coat the dry ingredients.
In the same bowl, add the olive oil, maple syrup, vanilla extract, cookie butter, and cashew butter. Stir well until all the dry ingredients are evenly coated with the wet mixture. The granola should have a slightly sticky consistency.
Transfer the granola mixture to the prepared baking sheet, spreading it out into an even layer and pressing it down firmly to create those big granola chunks. Bake for 18-22 minutes. The granola is done when it looks golden brown and slightly crisp.
Remove the granola from the oven and let it cool completely on the baking sheet. It will continue to crisp up as it cools.
Once cooled, break the granola into clusters and transfer it to an airtight container. It will stay fresh for up to two weeks at room temperature. Enjoy it as a snack, on yogurt, or with your favorite plant-based milk!
