Lemon Curd Chia Pudding

This fresh, tangy lemon curd chia pudding makes a perfect addition to your breakfast routine and is so refreshing as a zesty dessert. Tastes like summer in every bite! (Gluten free and Vegan)

Ingredients
  • zest 1 zest of a large lemon
  • juice of 1/2 large lemon
  • 400 ml can full fat coconut milk (I use Thai Kitchen ™ can coconut milk)
  • 1/4 cup maple syrup
  • 1/2 tsp turmeric powder
  • 3 tbsp black chia seeds
  • 1/4 cup optional: 1/4 cup of milk if desired thinner consistency
Instructions
  1. Whisk lemon zest, lemon juice, coconut milk, maple syrup and turmeric until well combined.
  2. Add chia seeds and mix until well distrubuted.
  3. Taste and adjust lemon or maple syrup as per desired taste.
  4. Pour into jar or covered glasses. Chill overnight in refrigerator or minimum 2-3 hours. Optionally may add more milk once chilled for thinner consistency.
  5. Optional to top with additional zest, coconut whip cream, mint, or granola. Serve chilled. Enjoy!
