Loaded Smashed Edamame Toast

This smashed edamame toast is creamy, zesty and high in protein.A delicious filling you can prep in advance for a quick protein packed breakfast.

Ingredients
  • 2-3 slices of toast ((I use sourdough))
  • Smashed Edamame
  • 1/2 medium avocado sliced
  • 3 tbsp nutritional yeast
  • 1 cup edamame ((without shells- I use frozen edamame and defrost them))
  • 2 tbsp tahini
  • 1/2 cup fresh cilantro
  • 1.5 tbsp lemon juice
  • 1/4 tsp asafoetida powder
  • 1 tbsp harissa paste
  • 1/2 tsp dried thyme
  • 1-2 tbsp water
  • Salt and pepper to taste
  • Toppings
  • 1/2 cup cucumber slices
  • 1 tbsp finely chopped dill
  • 1 tbsp lemon juice
  • 2 tbsp red cabbage sauerkraut
  • 1.5 tsp hemp seeds
Instructions
  1. In a bowl combine cucumber slices, lemon juice, dill and salt to taste and allow the cucumbers to rest while preparing the filling.
  2. In a food processor combine all the smashed edamame ingredients until creamy. If it's too thick add an extra 1 tbsp water.
  3. Assembly: Layer a generous amount of smashed edamame on toast, top with sauerkraut, then marinated cucumber slices. Lastly sprinkle on hemp seeds. Enjoy!
