Mango Chia Pudding

Oh my goodness- this is heaven!!! This thick creamy mango chia pudding is truly divine and makes a healthy tropical breakfast. (Gluten free and Vegan)

Ingredients
  • 2 large mangoes
  • 3 tbsp black chia seeds
  • 400 ml coconut milk - (I use Thai Kitchen brand of canned coconut milk)
  • 1/3 cup almond milk
  • 1 tbsp maple syrup
Instructions
  1. Whisk the mango, coconut milk, milk, and sweetener until well combined. Add chia seeds and mix to distribute the chia seeds well.
  2. Taste and adjust sweetness according to your preference.
  3. Pour the mixture into glasses. Chill overnight in the refrigerator. Stir once after an hour or so to distribute the chia seeds if needed.
  4. Garnish options with whipped coconut cream and fresh mangoes.
