Ingredients
  • 2 cups high quality vegan chocolate
  • 1 cup puffed quinoa
  • 1/2 cup roasted unsalted almonds, chopped
  • 2 tbsp dried goji berries
  • 1 tbsp hemp hearts
  • 1/4 tsp ground cinnamon (optional, for a warm flavour and antioxidant boost)
  • Pinch of sea salt
Instructions
    1. Melt the chocolate:
  1. Break the dark chocolate into small pieces and melt it in a heatproof bowl over a pot of simmering water (double boiler method). Alternatively, microwave in 15-second intervals, stirring in between, until smooth.
  2. 2. Prepare the mix-ins:
  3. In a large bowl, combine puffed quinoa, chopped almonds, dried goji berries, hemp hearts, cinnamon, and sea salt.
  4. 3. Combine:
  5. Pour the melted chocolate over the mix-ins and stir until everything is evenly coated.
  6. 4. Form bars:
  7. Fill your mini chocolate molds with mixture. Alternatively, if you don’t have a mold, scoop about 1 ½ tablespoons of the mixture onto a parchment covered baking sheet and shape into bars or rounds. Repeat until all the mixture is used.
  8. 5. Set:
  9. Place the molds or baking sheet in the refrigerator for about 30 minutes or until the bars are firm.
  10. 6. Stack and serve:
  11. Once set, stack the bars in an airtight container in the refrigerator for up to 2 weeks.
