Ingredients
2cups high quality vegan chocolate
1cup puffed quinoa
1/2cup roasted unsalted almonds, chopped
2tbsp dried goji berries
1tbsp hemp hearts
1/4tsp ground cinnamon (optional, for a warm flavour and antioxidant boost)
Pinch of sea salt
Instructions
1. Melt the chocolate:
Break the dark chocolate into small pieces and melt it in a heatproof bowl over a pot of simmering water (double boiler method). Alternatively, microwave in 15-second intervals, stirring in between, until smooth.
2. Prepare the mix-ins:
In a large bowl, combine puffed quinoa, chopped almonds, dried goji berries, hemp hearts, cinnamon, and sea salt.
3. Combine:
Pour the melted chocolate over the mix-ins and stir until everything is evenly coated.
4. Form bars:
Fill your mini chocolate molds with mixture. Alternatively, if you don’t have a mold, scoop about 1 ½ tablespoons of the mixture onto a parchment covered baking sheet and shape into bars or rounds. Repeat until all the mixture is used.
5. Set:
Place the molds or baking sheet in the refrigerator for about 30 minutes or until the bars are firm.
6. Stack and serve:
Once set, stack the bars in an airtight container in the refrigerator for up to 2 weeks.
