Peanut Butter Chocolate Energy Bites

Loaded with oats, creamy peanut butter and nuts and seeds, these make a delicious and healthy protein packed breakfast or snack! They're super easy to make and take less than 15 mins to put together. (Gluten free and Vegan)

Ingredients
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup semi sweet mini vegan chocolate chips
  • 1 cup large flake oats
  • 2 tbsp black chia seeds
  • 2/3 cup natural peanut butter (I use chunky to give more texture)
  • 2 tbsp honey
Instructions
  1. Add oats, chocolate chips, chia seeds and coconut into mixing bowl and mix with a spatula.
  2. Fold in peanut butter and honey until completely combined.
  3. Place mixture in fridge for 5 mins to bind ingredients.
  4. Take a small baking sheet and line with parchment paper, use an ice cream scoop and make small 1 inch balls and place on lined pan.
  5. Place bites in freezer for 15mins then serve. I keep mine stored in a Tupperware in the fridge. Enjoy!
