Nutty Gochujang Silken Tofu

Ingredients
  • 300 g silken/soft tofu
  • 1/4 English cucumber sliced
  • 2 tbsp peanut butter
  • 1 tbsp sesame oil
  • 1/2 tbsp soy sauce
  • 1 tsp gochujang
  • 1/2 tbsp water
  • 1/2 tbsp rice vinegar
  • 1/2 tsp minced ginger
  • 1 tbsp maple syrup
  • 1 tbsp coriander chopped
  • 1 tbsp chopped roasted peanuts
  • 1/2 tsp roasted sesame seeds (white or black)
  • 2 tsp peanut chilli crisp
Instructions
  1. Place the block of silken tofu in a plate with an edge. Make holes on the top of the tofu using a chopstick. Place slices of cucumber all around the tofu block
  2. In a bowl combine peanut butter, sesame oil, soy sauce, gochujang, water, rice vinegar, ginger and maple syrup and whisk until well combined.
  3. Pour the gochujang sauce over the tofu. Sprinkle with chopped peanuts. sesame seeds. coriander and peanut chilli crisp. Enjoy.
