Soft Chewy Peanut Butter Chocolate Chip Cookies

This cookies are outrageously good. So soft, chewy and loaded with nutty chocolate flavour, definite family favourite!

Ingredients
  • 1 cup + 2 TBSP all purpose flour
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 3/4 cup Vegan butter (I use Becel unsalted vegan butter) or unsalted butter (non vegan option))
  • 1/2 cup organic peanut butter (I used crunchy to have peanut pieces)
  • 1/4 cup white sugar
  • 2/3 cup brown sugar
  • 1 tsp pure vanilla extract
  • 1 egg replacer (I use Bob Red Mill's Egg replacer)
  • 1/2 cup mini vegan chocolate chips
  • 1/2 cup peanut butter chips (Optional)
Instructions
  1. Preheat oven to 350F
  2. In an electric mixing stand combine vegan butter and peanut butter and mix on medium for 3-5mins until fluffy and light in colour.
  3. Add brown sugar and white sugar and continue mixing for 2 mins.
  4. Add vanilla and egg replacer and mix for 2 mins.
  5. Add all purpose flour, baking soda and salt and mix until just combined. Add chocolate chips and optional peanut butter chips.
  6. Using a tbsp make 2 tbsp batter portions on a parchment paper lined baking sheet. Note the batter will be soft, no need to press the batter down.
  7. Bake at 350 for 10-12mins. ENJOY!
