These roasted potatoes are roasted to perfection, crispy on the outside, creamy on the inside infused with fragrant herbs. Tastes wonderful paired with our Ultimate Scrambled tofu recipe. (vegan, gluten free)
Preheat oven to 400 degrees F (200 degrees C).
Wash and peel potatoes, dice into desired size.
In a large oven baking dish combine the diced potatoes with all other ingredients minus the coriander.
Allow to bake for 45mins or until roasted and crispy outside is formed. Toss half way through cooking. Top with coriander and serve.
