Spicy Dan Dan Noodles

Dan dan noodles are one of the most famous Sichuan street foods. This recipe is authentically flavoured with a super rich savoury and spicy balanced sauce.  This is a real treat to your taste buds! (Vegan)

Yield: 4-5 servings
INGREDIENTS
 1 tbsp rice vinegar
 ¼ cup sesame oil
 1 tsp minced fresh ginger
 1 tsp Asafoetida (aka hing)
 ½ tsp black pepper
 1 tsp five-spice powder
 1 ½ tsp soy sauce
 ½ lb shitake mushrooms sliced 1/4 inch thick
 1 bunch spinach chopped
 1 ½ cups to 2 cups vegetable broth
 ½ can coconut milk
 1 package fried tofu
 24 oz fresh ramen noodles or 16oz dry noodles
 Chopped peanuts, cashews, red chili flakes and scallions for topping
DAN DAN SAUCE
  cup sriracha
  cup tahini
  cup tamari
 1 tbsp sesame oil
 1 tsp chili oil
 2 tsp sugar
 ¼ tsp five spice powder
DIRECTIONS

Preheat oven to 425F. Combine vinegar, sesame oil, ginger, hing, pepper, five-spice powder, and soy sauce in a bowl. Whisk until combined.

Toss mushrooms in the vinaigrette and place in a single layer on a sheet pan. Roast for 10-15mins or until crispy on the outside.

For dan dan sauce: combine all ingredients in a blender and blend until smooth.

Warm the dan dan sauce in a small saucepan on medium heat. Add tofu pieces. coconut milk, broth.

Bring a large pot of salted water to a boil and cook noodles as directions. Once cooked add to dan dan sauce. Add chopped spinach and toss.

Plate and top with chopped nuts and mushrooms.
