Anyone else always craving summer (especially living in Canada Ha!). This recipe tastes like summer in a ball combining these two refreshing flavours: lime and coconut; these balls are packed with energy and make the perfect grab-and-go or post-workout snack. (Gluten free and Vegan)
Place all ingredients into a blender or food processor and pulse until mixture starts to clump together.
Transfer to a bowl and scrape down the sides with a spatula. Use your hands to form small round balls, rolling in your palm.
Roll each ball in the coconut flakes to coat.
Store in an airtight container in the refrigerator for up to a week. ENJOY!
