LOADED SMASHED EDAMAME TOAST

This smashed edamame toast is creamy, zesty and high in protein.A delicious filling you can prep in advance for a quick protein packed breakfast.

Serving 2-3 toasts
INGREDIENTS
 2-3 slices of toast (I use sourdough)
Smashed Edamame
 ½ medium avocado sliced
 3 tbsp nutritional yeast
 1 cup edamame (without shells- I use frozen edamame and defrost them)
 2 tbsp tahini
 ½ cup fresh cilantro
 1.50 tbsp lemon juice
 ¼ tsp asafoetida powder
 1 tbsp harissa paste
 ½ tsp dried thyme
 1-2 tbsp water
 Salt and pepper to taste
Toppings
 ½ cup cucumber slices
 1 tbsp finely chopped dill
 1 tbsp lemon juice
 2 tbsp red cabbage sauerkraut
 1.50 tsp hemp seeds

DIRECTIONS

In a bowl combine cucumber slices, lemon juice, dill and salt to taste and allow the cucumbers to rest while preparing the filling.

In a food processor combine all the smashed edamame ingredients until creamy. If it's too thick add an extra 1 tbsp water.

Assembly: Layer a generous amount of smashed edamame on toast, top with sauerkraut, then marinated cucumber slices. Lastly sprinkle on hemp seeds. Enjoy!
