APPLE PIE OATMEAL

I love recreating my favourite desserts into a wholesome breakfast meal. This warmly spiced apple pie oatmeal is lightly sweetened, very creamy and will keep you feeling energized throughout your morning. It's the perfect weekday or lazy weekend breakfast. I topped mine with some roasted cinnamon apples to give it a little extra crisp.

INGREDIENTS
Yield: 2 servings
  cup Quick oats (can also use large flake oats or rolled oats- see notes)
 1 apple chopped (I used Fuji apples- peeled, cored and evenly chopped)
 ½ tsp cinnamon powder
 2 cups milk (plant-based or cow's milk- I used soy milk)
 1 tsp pure vanilla extract
 1 tbsp almond butter
 Pinch salt
 Pinch nutmeg
 2 tsp maple syrup (optional)
 Topping optional: 1/2 sliced roasted apple, almond butter drizzle, coconut whipped topping, chopped nuts, granola or yogurt.

Heat pot on medium heat. Add chopped apple and cinnamon powder and roast for 1 minute. Then add milk, oats, vanilla, salt, nutmeg and almond butter until oats are soft and thickened (may vary depending on desired consistency) ~ 3-5 minutes, stirring often. (Note- for large flake oats or rolled oats see notes for cooking instructions).

Pour into a bowl and top with optional maple syrup and other desired toppings. Enjoy warm!

Notes:
1) If using large flake oats or rolled oats: First add oats, milk, vanilla, cinnamon, salt, almond butter and nutmeg to a pot heated on medium. Allow oats to soften and thicken slightly ~10-15 mins stirring often, then add chopped apple and cook for another 2-3 mins.

2) For roasted sliced apples on top: Heat skillet on medium and add 1 tsp vegan butter and 1/4 tsp cinnamon. Once butter melted add sliced apples and roast on each side for 1 minute until browned.
