BLACK COCOA BLISS BITES

These fudgy dark chocolate, crunchy energy bites are made with wholesome ingredients and naturally sweetened. They make an easy quick snack that will keep going the whole day.

Yield: 18-20 balls
INGREDIENTS
 1 ¼ cups raw unsalted cashews (OR combination of half almonds and half cashews)
 1 cup packed pitted medjool dates
 ½ cup unsweetened shredded coconut
 1 tsp pure vanilla extract
 3 tbsp black cacao powder (alternatively use regular cocoa powder)
 2 tbsp almond butter or cashew butter
 1 tbsp virgin coconut oil
 ¼ tsp ground cinnamon
 pinch of salt
 ¼ cup vegan mini chocolate chips
 3 tbsp cocoa nibs
 2 tbsp melted white chocolate- optional

DIRECTIONS

Place cashews and dates in a food processor and blend until combined. Then add remainder of ingredients minus chocolate chips, chocolate nibs and white chocolate, and pulse until mixture starts to clump together.

Transfer to a bowl and scrape down the sides with a spatula. Add chocolate chips and chocolate nibs and mix with spatula or by hand until the dough is formed. Use your hands to form small 1 inch round balls, rolling in your palm. Be sure to press the dough firmly when making the balls to ensure it doesn't crumble.

Melt the white chocolate in a microwave safe bowl in 10-15 seconds spurts, mixing in between until fully melted, careful not to burn the chocolate. Store in an airtight container in the refrigerator for up to a 2 weeks. ENJOY!
