CHOCOLATE ALMOND MOUSSE

This decadent 3 ingredient mousse is so creamy, chocolatey and high protein! It makes the perfect after dinner treat!

Yield: 2-3 servings
INGREDIENTS
 200 g vegan dark chocolate
 400 g soft/silken tofu
 1 tbsp almond butter
 Optional toppings- Pinch of salt, chopped almonds, melted chocolate and vegan marshmallows

Break up the dark chocolate into a heat-proof bowl and melt in the microwave, stirring every 5-10 seconds to make sure the chocolate doesn’t burn. Once 85% of it is melted, continue mixing until it's all melted.

In a high speed blender, combine soft tofu, melted chocolate and almond butter until completely smooth. Transfer to a container and allow to set for an hour. Top with optional toppings and enjoy!
