Healthier than it’s dough-filled alternative, this cinnamon spiced and perfectly-sweetened bowl taste as good as the real deal but packed with hearty oat fibre!
In a large saucepan add milk, vanilla and oats and bring to a boil over medium heat. Once boiling, reduce to low heat and continue to cook, stirring often until oatmeal begins to thicken. (For large flake oats- ~4-6 mins. For quick oats and steel- cut oats cook according to oat package instructions.)
While oatmeal is cooking, for topping: In a small bowl mix melted butter, brown sugar, water and cinnamon powder until well combined.
For glaze: microwave cream cheese in a small bowl for 10 seconds or until just melted. Stir in confectioners’ sugar, milk and vanilla until creamy.
Remove oatmeal from heat and split into two bowls. Top with topping and glaze as desired. May also top with roasted pecans.
