PEANUT BUTTER CHOCOLATE ENERGY BITES

Loaded with oats, creamy peanut butter and nuts and seeds, these make a delicious and healthy protein packed breakfast or snack! They're super easy to make and take less than 15 mins to put together. (Gluten free and Vegan)

Yield: 15 balls
INGREDIENTS
 ½ cup unsweetened coconut flakes
 ½ cup semi sweet mini vegan chocolate chips
 1 cup large flake oats
 2 tbsp black chia seeds
  cup natural peanut butter (I use chunky to give more texture)
 2 tbsp honey

DIRECTIONS

Add oats, chocolate chips, chia seeds and coconut into mixing bowl and mix with a spatula.

Fold in peanut butter and honey until completely combined.

Place mixture in fridge for 5 mins to bind ingredients.

Take a small baking sheet and line with parchment paper, use an ice cream scoop and make small 1 inch balls and place on lined pan.

Place bites in freezer for 15mins then serve. I keep mine stored in a Tupperware in the fridge. Enjoy!
