Place the block of silken tofu in a plate with an edge. Make holes on the top of the tofu using a chopstick. Place slices of cucumber all around the tofu block
In a bowl combine peanut butter, sesame oil, soy sauce, gochujang, water, rice vinegar, ginger and maple syrup and whisk until well combined.
Pour the gochujang sauce over the tofu. Sprinkle with chopped peanuts. sesame seeds. coriander and peanut chilli crisp. Enjoy.
