Frequently Asked Questions

Expand All:
Can I make the chocolate peanut butter mousse ahead of time?

Absolutely! The mousse keeps well in the fridge for up to 4 days in an airtight container. In fact, letting it sit overnight makes the flavours even better. Just give it a quick stir before using, and you’re good to go!

I don’t have tofu, can I substitute it with something else?

Yes! If you’re not a fan of tofu, you can swap it with thick coconut yogurt, silken cashew cream, or mashed avocado for a different but still creamy texture. Just note that the protein content will be lower without the tofu.

What’s the best bread for this recipe?

I love using sourdough because it’s sturdy, has great flavor, and crisps up beautifully. But you can use whole-grain, gluten-free, or even a toasted bagel, just something that holds up well to all that delicious mousse.

Can I make this without sugar?

Definitely! The natural sweetness from the bananas and chocolate is often enough. If you want a little extra but prefer to avoid sugar, try a drizzle of maple syrup or use extra ripe bananas for more natural sweetness.

What’s the best way to caramelize bananas without them turning mushy?

The key is medium heat and not moving them too much! Let them sit in the pan for 1-2 minutes per side to get that golden caramelization before flipping. If they start getting too soft, remove them from the heat earlier.
