  1. Preheat your oven to 375F (180C).
  2. Use the large side of a cheese grater to grate the block of tofu into shreds. Add the shredded tofu, corn starch, soy sauce and oil in a bowl. Toss to coat then spread evenly on a parchment line baking sheet. Bake for 20-25 mins, mixing half way through until tofu is browned. For chewier shreds you will want to bake them a little longer (around 30 mins), or for more tender shreds bake them a little less.

  3. In a bowl combine all BBQ lime ingredients and mix well.
  4. Pour BBQ sauce over roasted shredded tofu, toss to combine and spread evenly in a single layer on baking sheet, bake at 375F for another 10 mins or until sauce is soaked up in the tofu and you'll see some crispy bits.

  5. Top it on your favourite salad, bowl, wrap or in a sandwich with some vegan cheese, heirloom tomatoes and avocado slices!
