Instructions

  1. Preheat oven to 425F. Combine vinegar, sesame oil, ginger, hing, pepper, five-spice powder, and soy sauce in a bowl. Whisk until combined.
  2. Toss mushrooms in the vinaigrette and place in a single layer on a sheet pan. Roast for 10-15mins or until crispy on the outside.
  3. For dan dan sauce: combine all ingredients in a blender and blend until smooth.
  4. Warm the dan dan sauce in a small saucepan on medium heat. Add tofu pieces. coconut milk, broth.
  5. Bring a large pot of salted water to a boil and cook noodles as directions. Once cooked add to dan dan sauce. Add chopped spinach and toss.
  6. Plate and top with chopped nuts and mushrooms.
