Shredded BBQ Lime tofu 

Add a zesty twist to your plant-based meals with this Shredded BBQ Lime Tofu—crispy baked tofu tossed in a tangy, smoky BBQ lime sauce. Perfect for topping salads, stuffing into sandwiches, or adding bold flavor to your favorite bowls!

INGREDIENTS
 1 -350g block extra firm tofu - shredded
 1.50 tbsp corn starch
 1 tbsp soy sauce
 1.50 tbsp neutral flavour oil
BBQ lime sauce:
 1 tbsp lime juice
 1 tbsp extra virgin olive oil
 Zest from one lime
 2 tbsp dark soy sauce (alternatively use regular soy sauce)
 ¼ cup tomato paste
 ¼ cup water
 ½ tbsp smoked paprika
 1 tbsp maple syrup
 ½ tsp red chilli flakes
 Salt and pepper to taste

Preheat your oven to 375F (180C).

Use the large side of a cheese grater to grate the block of tofu into shreds. Add the shredded tofu, corn starch, soy sauce and oil in a bowl. Toss to coat then spread evenly on a parchment line baking sheet. Bake for 25-30 mins, mixing half way through until tofu is browned. For chewier shreds you will want to bake them a little longer (around 35 mins), or for more tender shreds bake them a little less.

In a bowl combine all BBQ lime ingredients and mix well.

Pour over roasted shredded tofu, toss to combine and spread evenly in a single layer on baking sheet, bake at 375F for another 10-15 mins or until sauce is soaked up in the tofu and you'll see some crispy bits.

Top it on your favourite salad or in a sandwich with some vegan cheese and avocado slices!
