Ultra Crispy Smashed Potatoes

Place potatoes in a large pot with 1 tsp salt and allow to boil covered. Cook for 25-30mins until potatoes are slightly tender. Drain water and spread on pan. Allow to sit for 5 mins until dry.

Preheat oven to 400F. Add all ingredients to potatoes in a baking sheet and mix with your hands until potatoes are fully covered. Then lay them evenly on the baking sheet and smash them (I used a measuring cup) and let sit again for 5 mins.

Roast in the oven for 50-60 mins or until crispy. Top with chopped parsley. Serve with ketchup, sour cream or tzatziki sauce.
