Instructions
-
Preheat the oven to 425Β°F (220Β°C) and line a baking sheet with parchment paper.
-
Make the crispy Tuscan tofu: Press 1 block extra-firm tofu. Divide the tofu block into 3 large rectangles cut length wise. Then cut it in half to make squares, then cut each square across to create large triangles. Toss with a drizzle of olive oil, liquid aminos, baking soda, cornstarch, nutritional yeast, oregano, sun-dried tomatoes, asafoetida and smoked paprika. Spread in a single layer on a parchment covered baking sheet and bake for 25β30 minutes, flipping halfway, until golden and crispy.
-
Meanwhile, heat oil from sundried tomato jar in a large skillet over medium heat. Add the oregano, crushed red pepper flakes, and smoked paprika. Cook for 30 seconds until fragrant.
-
Stir in the sun-dried tomatoes and tomato paste. Cook for 2β3 minutes, stirring frequently.
-
Pour in the vegetable broth and stir until the tomato paste is fully incorporated.
-
Add the coconut milk and cannellini beans. Bring to a gentle simmer and cook for 5β7 minutes, allowing the sauce to thicken slightly.
-
Stir in the vegan parmesan, spinach, and fresh basil. Cook until the spinach has slightly wilted. Season with salt and pepper to taste.
-
Top with the crispy baked tofu just before serving. Finish with more basil, and a pinch of crushed red pepper flakes. Serve with crusty bread, pasta, or rice.
