In a small bowl, combine the ground flax and water. Set aside for 5 minutes to thicken.

Add the cooked beet and vegetable broth to a blender and blend until completely smooth.

Pour the beet mixture over the TVP and stir until evenly coated. Cover and let it sit for about 10 minutes, or until the liquid has been absorbed.

Once the TVP is rehydrated, gently squeeze out any excess liquid with your hands. Discard the liquid.

Measure out 1 cup of the rehydrated TVP and set it aside. This will be added back later to give the burgers a heartier, meatier texture.

Add the remaining rehydrated TVP to a food processor along with the black beans. Be sure to really dry the black beans with a paper towel before use. Pulse until mostly combined, leaving just a little texture. Avoid over-processing—you don't want a completely smooth mixture.

Transfer the bean mixture to a large mixing bowl. Add the reserved 1 cup of TVP, flax mixture, asafoetida, smoked paprika, chipotle powder, cumin, coriander, parsley, basil, nutritional yeast, liquid aminos, adobo sauce, umami paste, vegan Worcestershire sauce, breadcrumbs, rolled oats, molasses, tomato paste, liquid smoke (if using), salt, and pepper to taste.

Mix everything together with a sturdy spatula or clean hands until evenly combined.

Divide the mixture into 6 equal portions. Using a 4-inch round burger mold or cookie cutter, firmly press each portion into an even patty on a parchment covered cooking sheet. (You can make your burgers thicker, thinner, larger, or smaller depending on the buns you're using.)

Place the patties on a parchment-lined tray and refrigerate for 30 minutes to firm up.

Heat a lightly oiled skillet over medium heat. Cook the burgers for 3-4 minutes per side, or until a deep golden crust forms and the burgers are heated through. Avoid flipping too early, as this helps the burgers hold together.

Add the vegan mayonnaise, chipotle pepper, adobo sauce, smoked paprika, chipotle powder, lime juice, lime zest, maple syrup, asafoetida, and salt to a small blender or food processor. Blend until smooth and creamy. Refrigerate until ready to serve.
