Peanut Butter Chocolate Chip Cookies

This cookies are outrageously good. So soft, chewy and loaded with nutty chocolate flavour, definite family favourite!

Yield: 12-14 cookies
INGREDIENTS
 1 cup + 2 TBSP all purpose flour
 ½ tsp baking soda
  tsp salt
 ¾ cup Vegan butter (I use Becel unsalted vegan butter) or unsalted butter (non vegan option)
 ½ cup organic peanut butter (I used crunchy to have peanut pieces)
 ¼ cup white sugar
  cup brown sugar
 1 tsp pure vanilla extract
 1 egg replacer (I use Bob Red Mill's Egg replacer)
 ½ cup mini vegan chocolate chips
 Optional: 1/2 cup peanut butter chips

DIRECTIONS

Preheat oven to 350F

In an electric mixing stand combine vegan butter and peanut butter and mix on medium for 3-5mins until fluffy and light in colour.

Add brown sugar and white sugar and continue mixing for 2 mins.

Add vanilla and egg replacer and mix for 2 mins.

Add all purpose flour, baking soda and salt and mix until just combined. Add chocolate chips and optional peanut butter chips.

Using a tbsp make 2 tbsp batter portions on a parchment paper lined baking sheet. Note the batter will be soft, no need to press the batter down.

Bake at 350 for 10-12mins. ENJOY!
