Vegan Banana Bread (or Muffins)

Looking for the banana bread of your dreams! This recipe is perfectly light and fluffy and makes a healthy morning snack. (Vegan)

INGREDIENTS
 1 ½ cups all purpose flour
 1 tbsp black chia seeds
 1 tsp baking soda
 2 tsp baking powder
 ½ tsp cinnamon powder
 ¼ tsp nutmeg powder
 ¼ tsp salt
 4 ripe bananas ( I used frozen thawed bananas)
 ½ cup coconut milk (I use Thai Kitchen ™ brand can coconut milk)
 1 tbsp lemon juice
 ½ cup oil (canola or vegetable)
 1 cup dark brown sugar
 1 tsp pure vanilla extract
 2 vegan egg replacers (I use Bob's Red Mill Egg Replacer ™)
 ¾ cup vegan chocolate chips
 optional: 1/2 cup walnuts

DIRECTIONS

Preheat oven to 350F. Oil and lightly flour 9x5inch small banana loaf pan and line with parchment paper OR line a muffin tray with muffin tins.

Combine flour, chia seeds, baking soda, baking powder, cinnamon, nutmeg and salt in a large bowl and whisk together.

Mash bananas to a smooth consistency.
Note: If banana lumps desired (as I did) mash bananas until lumpy. Whisk in coconut milk and lemon juice.

Combine oil, brown sugar, vanilla and egg replacer in a bowl.

Combine flour mixture and oil mixture into banana mixture. Whisk together until just combined. Add chocolate chips. Optional: If walnuts desire add in at this step.

Fill muffin trays to the top. Bake for 50-60mins for a small banana loaf. Bake for 30-35 mins for muffins.
