APPLE CINNAMON BAKED OATMEAL

This baked oatmeal recipe is loaded with wholesome ingredients- cinnamon, oats, nuts and apples. It keeps me full all morning, especially when topped with Greek yogurt and more fruit!

Yield: 8 Servings
INGREDIENTS
 2 cups Large flake oats
 ¾ cup Milk of choice
 2 tsp Baking powder
 1 tsp Cinnamon
 ¼ tsp Nutmeg
 1 tsp Vanilla extract
 2 tbsp Peanut butter powder (I use PB&ME)
 2 tbsp Flax ground
 4 tbsp Chocolate chip
 2 Apples chopped and peeled (can also use berries instead)
 ¾ cup Vanilla Greek yogurt (I use Liberte %0 vanilla Greek yogurt)
 2 Banana ripe mashed (I use frozen ripe)
 2 tbsp Coconut oil
 1 pinch Salt
 ¼ cup Chopped pecans - optional
 Coconut sugar for topping

DIRECTIONS

Pre-heat oven to 375F.

Grease a 3quart rectangular glass dish with coconut oil. In a large mixing bowl as all ingredients and mix with a whisk until just combined.

Spread evenly into glass pan. Sprinkle with coconut sugar. Cook for 55-60mins.

Allow to cool for 15mins. Cut into 8 pieces. Store in refrigerator up to 1 week.

Serve warm and top with yogurt and fresh fruit!
