Cacao Cashew Energy Bites

These fudge dark chocolate, crunchy energy bites are made with wholesome ingredients and naturally sweetened. They make an easy quick snack that will keep going the whole day. (Gluten free and Vegan)

Yield: 18-22 balls
INGREDIENTS
 1 ¼ cups raw unsalted cashews (OR combination of half almonds and half cashews)
 1 cup pitted medjool dates
 ½ cup unsweetened shredded coconut
 3 tbsp raw cacao powder
 2 tbsp almond butter
 1 tbsp virgin coconut oil
 ¼ tsp cinnamon powder
 pinch of salt
 ¼ cup vegan chocolate chips
 3 tbsp cocoa nibs

DIRECTIONS

Place cashews and dates in a food processor and blend until combined. Then add remainder of ingredients minus chocolate chips and chocolate nibs and pulse until mixture starts to clump together.

Transfer to a bowl and scrape down the sides with a spatula. Add chocolate chips and chocolate nibs and mix with spatula. Use your hands to form small round balls, rolling in your palm.

Store in an airtight container in the refrigerator for up to a week. ENJOY!
