CREAMY SPINACH PESTO PASTA

Yield: 4-5 servings
INGREDIENTS
 1 cup fresh basil
 1 cup fresh spinach
  cup pine nuts
 ½ cup extra virgin olive oil
 ½ cup parmesan cheese (plus extra for serving)
 ½ cup nutritional yeast flakes
 ½ tsp asafoetida (aka hing)
 1 ½ cups milk (I used 2% milk)
 2 tbsp table cream (15%MF)
 1 cup firm tofu- 1 cm cubed and lightly roasted
 salt and pepper to taste
 1 package rotini pasta (12oz)
 1 lime (optional)

DIRECTIONS

In magic bullet grind basil, spinach, pine nuts, olive oil, parmesan, and nutritional yeast until smooth.

Heat a skillet with 1 tsp oil, add asafoetida (hing) and allow to roast for 1 min. Add pesto sauce, tofu, milk and cream and allow to cook for 5-8mins. Note- To roast tofu, cube firm tofu and roast in 2 tbsp canola oil in pan heated on medium heat until light golden brown on all sides.

Cook pasta according to instructions. I cook until al dente.

Add cooked pasta to parmesan sauce. Serve topped with parmesan and a squeeze of lime juice.
