Sauteed Kale

This sautéed kale makes a fantastic perfect side dish with it’s tangy fresh flavours. (Gluten Free and Vegan)

Yield: 2 servings
INGREDIENTS
 1 tbsp extra-virgin olive oil
 ½ tsp asafoetida (aka hing)
 ¼ tsp red chili flakes
 1 bunch of fresh kale (5 cups kale), rinsed and dried, ribs and stems removed, leaves thinly sliced crosswise
 2 tbsp nutritional yeast
 salt and pepper to taste
 1 tbsp freshly squeezed lemon juice
 optional chopped fresh parsley for topping

DIRECTIONS

In a large skillet, heat the oil over moderate heat. Add the hing and chili flakes and sauté for 1-2 minutes.

Add the chopped kale in batches and toss to coat. When all of the kale is added to the pan, cover with a lid and cook for 4-5 minutes tossing it every 1 minute.

Then add nutritional yeast and sauté. Squeeze lemon juice over top, serve hot! ENJOY!
